Is there any way to control the sensitivity bar like in SteerMouse (available only on Mac)? I want to control the values directly just like in that screenshot

At the moment, this is not possible. The speed and acceleration are controlled by Windows and the mouse driver. The slider in XMBC just sets the internal windows speed - which is an integer number between 1 and 20 (I think). So its not possible, outside of the mouse driver to get finer control of these fields.
